Fun fact: Johnnycakes may have been known first as Shawnee Cakes, a Native-American pancake using cornmeal. Another theory is that they were originally called "Journey" Cakes because travelers often packed a bundle of them for trips, and settlers cooked them while on long treks.
The only ingredients are water, cornmeal, and salt.
I cut the recipe in half and enlisted Stef to eat them, anticipating they would be horrible. Surprisingly, they were halfway decent.We ate them with Ellen's homemade jalapeno jelly, which was a unique combination that somehow worked.
Would I make these again? Probably not, unless the Apocalypse struck and I was suddenly stranded in the wilderness with only a tub of cornmeal.
Were they are disgusting as previous corn-based pancakes? Not at all! A success.
