Spinach Pancakes

Finally! Spinach is awesome.

These had whole wheat flour too! So healthy. Don't worry, I bought new flour without bugs living in it.
These had a cup of plain yogurt in them, which gave them kind of a tart flavor. It was a bit overpowering alone, but much better when I put butter on the pancakes. I also put some cheese into a couple as I was cooking them, which turned out really good.
Next time I might even try using vanilla yogurt for a sweeter taste

  1. Whole wheat flour should really be kept in the freezer to keep it from turning rancid, and will also at least kill any bugs if it doesn't prevent them from getting into it.
    I could eat spinach pancakes for lunch or supper but not breakfast, I think.
