Cheese Blintzes

Happy St. Patrick's Day! I am dying all my food and beverage green today.

The recipe for these was very similar to the last one so I decided to skip making the filling and just use the leftover blueberry stuff.
I mixed by hand instead of the blender. The batter was thinner so they looked and tasted much more like crepes.

I kept expecting them to taste minty because of the color, but they were just normal.
Not so sure how I feel about blintzes. Maybe if they were filled with real cream instead of cottage cheese...

ALSO I just realized that I accidentally skipped a recipe! It was the Basic Crepe Batter recipe. I will go back and do it next!
