These pancakes have a half cup of beer and some lemon zest in them. I used blueberry beer to compliment the lemon.

Of course we had to drink the rest! Waste is a terrible thing.

After mixing everything, the batter is refrigerated for an hour. The perfect amount of time to watch an episode of Primeval. They cooked very easily and stayed together perfectly!

Andy ate his with maple syrup; I spread some jam on mine and rolled it up like a crepe. They were wonderful. You could really taste the lemon.

By the time they were done though, it was past 11 at night and I was too tired to take pretty pictures.
