Norwegian Cottage Cheese Pancakes

Yum, more cottage cheese.
Cottage cheese, eggs, flour, and oil went into the blender. (It wanted rye flour, so I figured I would use whole wheat instead but then there were BUGS in the whole wheat so I used white). Double yum.
It actually blending up pretty smooth. And didn't require very many dishes!
I ate a giant one for dinner. It was really good! Put some butter on it. I think that these were actually better thicker than thinner. Couldn't really taste the cheese, but it gave them a nice texture and moisture and a salty taste.
