Baked Polish Pancakes with Apple Filling


These pancakes were almost like crepes - very thin and egg-y. For some reason, the batter turned out extremely lumpy. I think it had something to do with the butter. Still do not own any measuring utensils.
Also do not own a baking pan, so I baked these on a whoopie pie pan. Filled the pancakes with sliced apples and cinnamon, dusted sugar on the top, then baked them for 20 minutes.
In the end, the lumps were not detectable! Next time I think I will put some more cinnamon on top.
They were delicious!
