Johnnycakes

Fun fact: Johnnycakes may have been known first as Shawnee Cakes, a Native-American pancake using cornmeal. Another theory is that they were originally called "Journey" Cakes because travelers often packed a bundle of them for trips, and settlers cooked them while on long treks.

The only ingredients are water, cornmeal, and salt.
I cut the recipe in half and enlisted Stef to eat them, anticipating they would be horrible. Surprisingly, they were halfway decent.
We ate them with Ellen's homemade jalapeno jelly, which was a unique combination that somehow worked.
Would I make these again? Probably not, unless the Apocalypse struck and I was suddenly stranded in the wilderness with only a tub of cornmeal.
Were they are disgusting as previous corn-based pancakes? Not at all! A success.
