Gingerbread Waffles

I cut this recipe in half which ended up making the perfect amount. I used blackstrap molasses (high in iron!) which I think gave them the darker color.

We ate them with whipped cream and syrup. They were good, but not nearly as wonderful as the gingerbread pancakes.
The color also made it hard to tell when they were done cooking, so I may have undercooked them a bit...
