These called for 2 cups of mashed potatoes. Stef (best roommate ever) made some for me in the morning! She used lovely purple potatoes.

I mixed the cold potatoes into the batter. It was quite lumpy.

They smelled pretty good when cooking, but came out a rather odd green color. It was either the potatoes oxidizing or the original purple color.

I actually think the colors made them more exciting!

They tasted pretty much like mashed potatoes, with a hint of egg. I ate one with butter and it was alright. Ellen thought they might be good with brocoli and cheese sauce. I had a hard time convincing anyone to eat the leftovers.
